Perfect Fish on an Open Fire or Grill

My family loves fish and I have found the perfect way to cook it while camping. You can use this technique on a grill over an open fire or right on your propane grill camping or even at home.

Using filets that I purchase (we love Tilapia) or fresh caught fish filets, wash thoroughly. Use large pieces of aluminum foil (two layers) and smooth butter on a square in the middle about the size of the filets when laid on in a single layer. Place the filets on the butter. Place Lemon slices and onion rings on top of the filets and then drizzle with Olive Oil or bottled Italian Dressing if you like a little more spice. Fold the long sides of aluminum foil toward the middle and seal and then the shorter sides toward the middle and seal. Place this envelope full of fish on the grill over medium heat. Turn after about 5-7 minutes and cook on other side. Check the fish. If it is white, tender and flaky, it is done.

I serve this with veggies (potato cubes, onions and carrots) that I have put in an aluminum foil envelope and cooked over the grill as well. I usually start these before I prepare the fish as they take a little longer to cook.

Great meal and no pots and pans to clean up......enjoy
